Especially good with carnitas. Can make them big for quesadillas or small or tacos.
Ingredients
- 2 C flour
- 1 t salt
- 1/2 t baking powder
- 1/4 lard (can also use rendered bacon fat, or vegetable shortening)
- 2/3 C warm water
Directions
- Mix dry ingredeints.
- Cut in lard and rub into dry ingredients using your fingertips.
- Add in warm water and work into a smooth dough on a floured surface.
- Divide dough into pieces and let rest until plastic wrap for 20 min.
- Roll thin and cook on a dry skillet on medium heat.
- Should get nice colored dots after 30-60 seconds on each side.
- Put between a slightly damp dish towel to keep warm and soft.
