Candy Canes

Great holiday treat! Easier to make than you would think 🙂

800g Sugar
300g corn syrup
250g water
30mL peppermint extract
Red food coloring

Preheat the oven to 200. Heat the sugar, corn syrup, and water to 280F on the stove (soft crack) then remove from heat. Add the peppermint extract and stir. Pour out about 3/4 of this mixture out on a silpat, marble or heavy plastic cutting board. Anything that will absorb the heat and not melt. Color the remaining sugar with red food coloring and pour it out too. Let the sugar cool until you can start working with it, it will be really hot, we used gloves to handle it. Then begin to pull and stretch the candy to add air to the mixture which turns it pearly in color. Put the sugar back in the oven at any point that it gets to stiff to work with. The number of times you do this will depend a lot on the surface area of the sugar. Make any design you would like then pull the candy to extrude the candy cane. Twist the candy and cut it will scissors and form into a candy cane hook shape. See the YouTube video below to see how Nick and I did it!
