Turnip and Greens Frittata

Ingredients:

  • 3 turnips, peeling and cut into small cubes
  • 2 cups of chopped turnip greens
  • 1 small onion
  • 2 garlic cloves
  • 6 large eggs
  • 3 tbsp of heavy cream (can also use whole milk or half and half)
  • 1/2 cup of nice melting cheese (Gruyere, fresh mozzarella etc – I have used both)
  • Oil, salt, pepper etc

Recipe:

  1. Preheat oven to 350F.
  2. Roast turnips with some oil for ~20 minutes, stirring occasionally until they are golden and fork tender.
  3. Increase oven to 400F once the turnips are done.
  4. While #2 is happening… sauté the onion for 5-7 minutes with salt and pepper. Add garlic and good for a minute or so until fragrant. Then add the greens and cook until barely wilted, ~2 minutes more.
  5. Add the roasted turnips to the pan of onions and greens.
  6. Whisk the eggs and dairy together, then pour into the veggie pan.
  7. Cook WITHOUT stirring for 2-3 minutes, then add your cheese and bake at 400F.
  8. Bake for 10-15 minutes until its risen a bit and is golden.
  9. Enjoy!
