Thai Curry
1 T Thai curry paste (yellow, masamum, red, green)
1 onion
1 T salt
1 Can coconut milk
1-2 chicken breast, or any other type of protein- beef tends to add a lot of flavor to the curry. Which can be nice, but I prefer chicken, as it adds less flavor.
Any veggies you want! zucchini, summer squash, broccoli, cauliflower, carrots, potatoes etc.
Rice
Start the rice cooker.
Chop the chicken into small pieces and sauté in oil with the onion, salt and curry paste.
You might need to add a little coconut milk or more oil or turn down the heat if the pasta is burning- be careful with it!
Once the onion and chicken are nice and soft add the rest of the coconut milk and all your veggies. Simmer until the veggies are cooked.
Serve over rice!
