Ramos Gin Fizz

Possibly my favorite drink after only having it a few times. Don’t worry about the raw egg, any salmonella from eggs is from the outside of the shell and not the insides. If you are super worried you can always wash the outside of the egg with warm water.

To a dry (no ice) shaker add:

1 1/2 oz gin
1/2 oz lemon juice
1/2 oz lime juice
1 oz simple syrup
2 oz heavy cream
1 egg white

top with soda – shouldn’t need much, the bubbles and the foamed egg really expand pretty quickly

Shake vigorously for longer than you think your should (20 sec). This fluffs up the egg. Then add ice to the shaker and shake for another 10 seconds. Strain into a glass without ice and top with club soda. The proper recipe calls for a few drops of orange flower water to be added too.
