Ingredients:2 C peeled and shredded Potatoes
1 T shredded onion
3 eggs lightly beaten
2 T flour
1 1/2 t Salt
1/2 C Vegetable oil for fryingDirections
1. Place shredded potatoes in a cheese cloth. Wring, extracting as much moisture as possible.
2. In a medium bowl, combine potatoes, onion, eggs, flour and salt. Mix.
3. In a large, heavy bottomed skillet, heat oil over medium high heat. Add large spoonfuls of potato mixture to hot oil, pressing down to form 1/2 inch patties.
4. Brown on one side, about 3 min, flip brown on the other. Let drain on paper towels and serve hot.

We had them with sour cream and apple sause.
