Pita
This is a simple recipe for surprisingly tasty pita! Great for having with hummus, cheese etc. It takes some time- about 2 hours, so it is not quick, but definitely worth it. It also extremely cheap to make.
You will need:
1 cup of regular flour
1 cup of whole wheat flour
1 tablespoon of oil or butter
1 teaspoon of salt
2 teaspoons of honey
1 packet of yeast or 2 teaspoons of yeast
water
Makes 6 pitas
I used some nice whole wheat flour.
1. Activate the yeast in a half cup of water for 10 minutes.
2. Combine all the dry ingredients and mix.
3. Combine ALL ingredients including yeast and mix. Add more water until it is doughy but not sticky
4. Knead the dough for 5-10 minutes.
5. Coat a bowl with oil (or a spray like Pam) and let the dough rise in this bowl for about an hour with a damp towel covering it.
6. Punch the dough down and cut it into 6 equal pieces. Preheat the oven to 400 and heat up a pizza stone if you have one, if not just put a baking sheet in the oven upside down (like I did).
7. Place these pieces on a plate and cover for 20 minutes with a damp towel.
8. Roll out the dough balls into circles about 1/8 to 1/4 inch in thickness. Put one or two on your pizza stone/ baking sheet, and cook for ~5 minutes.
If you want crispy pita then cook them longer, any part of the pita that is getting golden brown will probably be more crispy than soft. If you want them soft, then you are not looking for them to change color at all, instead I took them out when they puffed up. See picture.
Take them out and eat! The puff may even make a good pocket just like a pita should have. I ate mine with some hummus cheese and chili garlic sauce. Yum!
