Panforte
Great filling Italian cookie – makes a bunch
1 pound of chopped roasted nuts
almonds
hazelnuts
walnuts
1 t cinnamon
1 t allspice
1 t nutmeg
1 t coriander
1/2 t white pepper
1 t cocoa powder
1 C sugar
1/2 C honey
1 pound of dry fruit
figs
apricots
candied orange peels
prunes
1 1/2 C flour
Powdered sugar for dusting
Preheat oven to 350 degrees.
Mix fruit, nuts, flour, spices, and cocoa. Heat the sugar and honey and boil for 1 minutes. Pour the sugar over the mix of fruit and nuts.
Roll the mixture out onto a greased pan or pan with parchment paper. Bake for 15 min. Let cool for a few minutes until more firm them cut into small pieces and dust with powdered sugar.
