Palak Paneer
Half a brick of Paneer
1 Bag of fresh spinach
4 T oil
1 large onion chopped
1 large tomato chopped
1 inch piece of ginger
1 T garlic
2 t. Coriander powder
1 t. cumin powder
1/2 t. turmeric powder
1 t. garam masala
Salt to taste
Cut the paneer into cubes and fry until golden in oil. Set aside on paper towels to cool.
Saute the onions in a large high walled pan or pot.
Add the garlic and ginger, and simmer.
Chop the spinach into small pieces and add to the onion. Add the rest of the ingredients.
Cook until the spinach becomes nice and soft. If you would like it smoother, blend with an immersion blender.
Add the previously fried paneer cubes and serve as soon as they warm up.
Eat immediately with naan or some other type of bread.
