Ingredients:
2 cups cake flour (make cake flour by removing 1 T of flour per half cup replacing with 1T corn starch! sift or mix really well)
1 cup all-purpose flour
4 egg yolks
1/4 cup olive oil
pinch of salt
this is a recipe from serious eats:
10 ounces (about 2 cups) all-purpose flour, plus more for dusting
2 whole large eggs (about 4 ounces)
4 yolks from 4 large eggs (about 2.5 ounces)
1 teaspoon kosher salt, plus more for salting water
Preparation Instructions:
1. Begin by mixing all of the ingredients in a food processor.
2. Add water slowly until the cough can form a ball. It’s best to add a little at a time.
3. Knead the dough on a lightly floured surface until you can form a ball.
4. Wrap in plastic wrap and refrigerate for at least 30 minutes.
5. Once the dough is chilled, you can cut it into pieces and use it to make any type of pasta you need. Fettuccine, Pappardelle, Ravioli, Etc.
6. Boiling water -> cook only for 60-90 seconds once the water comes back to a boil, more and things get to mushy…
