Gazpacho

 

Basic Recipe:Chop tomatoes, green peppers, cucumbers. Set aside 1/4 of the veggies, and add the rest to a bowl.
Add one package of italian dressing mix, minced garlic, 2T red wine vinegar and a splash of olive oil.
Cover with V-8.

Blend until mostly smooth
Add back in the chopped vegetables
Adjust taste with Black pepper

Alternate vegetables:
Onions
Jalapeno
Yellow squash or zucchini

You can leave the entire mix chunky (country style) or blend until smooth.
