Simple Fish Tacos
Part of my goal to like fish more – these were delicious!
2 limes
1lb cod/ tilapia
Some olive oil
Cumin
Chili powder
Paprika
Salt
Black pepper
(sorry i dont have exact values for these, add as much spice as you would like…)
1/2 a Red onion
1/3 a Cabbage
1/4 C ? Cilantro
Corn tortilla
Hot sauce
Marinade the fish in 1.5 limes worth of lime juice, (save the other half) with olive oil, cumin, chili, paprika, salt, pepper. Again sorry i don’t have values for these, but i can say i added a pretty good amount of the spices maybe 1-2 teaspoons each? Marinade for 20-30 minutes. Then bake at 350 or grill or pan fry until flaky.
In the mean time make the topping: Mince the onion, cabbage, cilantro and toss together with some salt and the remaining juice from the last 1/2 lime. Add more of anything to taste.
When the fish finishes quickly fry each corn tortillas briefly in oil. They are SO much better this way.
Dress the tacos with the topping and some hot sauce if you would like!
