Edamame Falafel

What do you do when you meant to buy whole edamame and really bought pre-shelled edamame? Puree and fry them of course!

1.5 cup of edamame beans, defrosted and pat as dry as possible
1 small onion
1 T Garlic
1/2 t cumin
1/4 t ginger
1/2 t black pepper
1-2 t salt (more if you like them saltier)
1-2 t red pepper flakes
~4 T flour

Oil for deep frying

(probably could also add a bit of baking powder and let the mixture sit 30-60 min for fluffier falafel, but I didn’t)

-Blend the beans, onion and garlic until smooth ish but still enough chunks to have nice texture.
-Remove as much liquid as you can from this mix, and start heating your oil for deep frying.
-Add in the rest of the ingredients and mix. (this is the point as which you could let the mixture rest if you wanted fluffier falafel)
-Shape the mix into 1in balls and fry.
-Remove when nice a crispy brown and sprinkle with salt.

Enjoy!
(Another side note is that while these were delicious, a sauce to go with would have been nice…)
