Coleslaw

Ingredients:

  • 1 medium cabbage (about 2 pounds), outer leaves removed. ( I like to use purple and green cabbages, makes it more visually interesting) (And yes you can use a bag of mix chopped mix, but I would only do this if you are really short on time, who knows when those veggies were cut…)
  • 3 medium carrots, shredded
  • 1/2 C loosely packed fresh parsley leaves, coarsely chopped (I have forgotten this before and its not super critical, does it add flavor? of course. )
  • 1 C mayo
  • 2 T apple cider vinegar or more to taste
  • 2 T Dijon mustard or coarse ground mustard
  • 1 t celery seeds
  • 1/4 t fine sea salt or more to taste
  • 1/4 t fresh ground black pepper or more to taste
  • 1 to 2 t sugar or honey (optional, depending on how sweet you want it)

Recipe:

  1. Combine all the raw veggies in a bowl. Chop the veggies as thin or thick as you want. It’s just coleslaw, don’t take it too seriously.
  2. Combine all seasonings and whisk together.
  3. Combine, veggies and liquid. Be careful, you can’t take seasoning liquid back, so go light and taste until you get the desired consistency.
