Ingredients:
- 1 medium cabbage (about 2 pounds), outer leaves removed. ( I like to use purple and green cabbages, makes it more visually interesting) (And yes you can use a bag of mix chopped mix, but I would only do this if you are really short on time, who knows when those veggies were cut…)
- 3 medium carrots, shredded
- 1/2 C loosely packed fresh parsley leaves, coarsely chopped (I have forgotten this before and its not super critical, does it add flavor? of course. )
- 1 C mayo
- 2 T apple cider vinegar or more to taste
- 2 T Dijon mustard or coarse ground mustard
- 1 t celery seeds
- 1/4 t fine sea salt or more to taste
- 1/4 t fresh ground black pepper or more to taste
- 1 to 2 t sugar or honey (optional, depending on how sweet you want it)
Recipe:
- Combine all the raw veggies in a bowl. Chop the veggies as thin or thick as you want. It’s just coleslaw, don’t take it too seriously.
- Combine all seasonings and whisk together.
- Combine, veggies and liquid. Be careful, you can’t take seasoning liquid back, so go light and taste until you get the desired consistency.
