Cilantro Lime Coleslaw

Can a coleslaw be surprisingly good? Do I have low expectations for coleslaw? YES to both!

Ingredients:

  • 1 head cabbage (I have made this with Savoy and Napa, both are great, even mix in some purple for some visual excitement.)
  • 4 green onions
  • 1/2 bunch fresh cilantro, torn (use the stems! plenty of flavor and crunch)
  • 1/2 C sour cream
  • 1/2 C mayo
  • 1 1/2 tablespoons sugar
  • 2 limes
  • Salt and pepper

Recipe:

  1. Thinly slice all the veggies, and toss together.
  2. Combine the sour cream, mayo and sugar. Zest both of the limes, yes both. Then add a juice from 1/2 of one of the limes. Save the other limes to adjust taste later. Season with salt and pepper to taste.
  3. Combine the dressing and veggies, adjust to taste with lime juice, salt, sugar, pepper.
  4. I like to then refrigerate it for 30-60 minutes before I eat it to that its totally cold, but not necessary.
