Can a coleslaw be surprisingly good? Do I have low expectations for coleslaw? YES to both!
Ingredients:
- 1 head cabbage (I have made this with Savoy and Napa, both are great, even mix in some purple for some visual excitement.)
- 4 green onions
- 1/2 bunch fresh cilantro, torn (use the stems! plenty of flavor and crunch)
- 1/2 C sour cream
- 1/2 C mayo
- 1 1/2 tablespoons sugar
- 2 limes
- Salt and pepper
Recipe:
- Thinly slice all the veggies, and toss together.
- Combine the sour cream, mayo and sugar. Zest both of the limes, yes both. Then add a juice from 1/2 of one of the limes. Save the other limes to adjust taste later. Season with salt and pepper to taste.
- Combine the dressing and veggies, adjust to taste with lime juice, salt, sugar, pepper.
- I like to then refrigerate it for 30-60 minutes before I eat it to that its totally cold, but not necessary.
