Chicken Fiesta
- This is very easy and very good for you. Lots of vegetables and protein. Excellent for snowy nights.
- Chicken – this can be a can or two, or the precooked chicken pieces (like Tyson or Perdue), or raw chicken if you cooking on a stove.
- 1/2 cup of frozen corn ( or mixed vegetables)
- 1/2 cup of black beans
- 1/2-1 cup of salsa
- If your chicken is already cooked then all you need to do is warm everything up nice and hot – the vegetables and beans and salsa don’t need to be “cooked” just need to be hot.

For the Stove:
- If you are starting with raw chicken- cut the chicken into small bit size pieces and cook in oil or butter.
- Otherwise simply combine all the ingredients and heat till hot. Then eat!

For the Crock Pot:
- Combine the precooked chicken and all the other ingredients in the crockpot and turn on high for a few hours or until hot. Enjoy!
You could put this over cooked rice, onto flour soft taco tortillas, or eat it like a chili or stew!
