Carrot and Mushroom Pho
Not really a proper pho- I just made it up and used a Pho seasoning cube to flavor the broth. It turned out well.
Spicy!
Start with about 5 cups of water and bring to a boil.
Add:
a few chopped carrots
5-7 mushrooms
Large chopped onion
10-15 dried red chills cut in half
1 T soy sauce
2-3 T garlic
Brick of soft tofu
1-2 Vietnamese pho seasoning cubes
1 T fine chopped or shredded ginger
Boil until the veggies are cooked through then add noodle if y ou would like. Eat as soon as the noodles are cooked!
Eat a pepper if you dare- they could be very hot.
