Broccoli Cheddar Soup
inspired by Panera’s recipe
1/4 C butter
1/2 chopped onion
1/4 C flour
2 C half and half (or milk)
2 C chicken stock
2 bay leaves
1/2 lb fresh brocolli
1 C carrots
1/4 t nutmeg
8 oz sharp cheddar cheese
salt and pepper to taste
Start by making a roux. Melt the butter in high walled dish or medium pot. Slowly add the flour and whisk for 3-5 minutes. Then slowly add the half and half/milk, followed by the chicken stock. Add the onions and bay leaves and simmer for 20 minutes.
Then add the broccoli and carrots and simmer until they are tender (20-25 minutes). Add the salt and pepper and blend in a blender or use am immersion blender. Return to the heat and all the nutmeg and cheese, stir until everything is mixed and melted. Serve immediately.
