Boyden Beef Roast

 

1 large onion sliced
8 cloves garlic chopped
a little olive oil1.5 lb chuck steak, (into 5 large chunks)

3/4c white wine (or water)
about 1/4 c pureed ginger (from the tube)
about 1/4 c soy sauce
about 1/4 c honey

about 3 large carrots, peeled and chunked.

preheat oven 325
olive oil in dutch oven.
saute onions, when soft, add garlic, saute until fragrant.
remove.

a little more olive oil
sear and brown meat, remove

onions, garlic and white wine back into pan, add beef, add ginger, soy, honey. stir.
cover and into oven. don’t touch for 2 hours.

add chunked carrots and a little (about a cup) water. back into oven for 45m.

ooh. seriously, ooh.
I served it over mashed potatoes. (egg noodles might work too) (or toasted italian loaf or toasted baguette)

Steve’s original uses beef brisket. I had chuck steak (pot roast)
