Blueberry Peach Crisp, no oatmeal

 

An easy and quick summer crisp that requires no Oatmeal. If you have oats, you can substitute half of the flour in the topping with them. Preheat oven to 350.Fruit Base
5 cups of fruit… any combination of blueberry and peach you have on hand
Zest of one lemon
Half the juice from zested lemon
Splash of orange juice
1/8 cup of sugar
1/4 cup of flour
dash of salt

Mix together, pour into a baking dish.

Topping:
1 cup flour
1/4 cup sugar
1/4 cup brown sugar
1-2 t cinnamon
1T vanilla (good squirt)
1/2 t salt
Blend all together and then add:
6 T cold butter, chopped.

Mix together by hand in or in a food processor. Sprinkle over fruit.

Bake for 45 – 50 minutes. Serve warm with vanilla ice cream.
