Ho’kessin Holl’r Number 1 (thinner)
Makes. About 2 cups of sauce.Preparation time. 45 minutes.
Ingredients
2 cups Jack Daniel’s Black Label or Bourbon1 cup ketchup1 tablespoon lemon juice2 tablespoons Worcestershire sauce2 tablespoons red wine vinegar4 tablespoons dark molasses1/2 teaspoonliquid smoke(optional)
Method
1) Taste the whiskey to make sure it is up to your standards. Pour 1 cup of whiskey into a saucepan and set aside the remaining whiskey. Bring the saucepan to a boil and reduce the liquid to about 2 tablespoons. Don’t let the alcohol flame. Taste the unused whiskey to make sure it hasn’t gone bad.
2) Add 1/2 cup of the whiskey and the other ingredients. Simmer over a low heat for 30 minutes and reduce it by about 1/3. Use it immediately or bottle it and keep it in the refrigerator for a month or more. Drink the remaining whiskey.
Ho’kessin Holl’r Number 2 (thicker, more tomato-ey)
Ingredients
Original recipe makes 4 cups
- 1/2 onion, minced
- 4 cloves garlic, minced
- 3/4 cup bourbon whiskey
- 1/2 teaspoon ground black pepper
- 1/2 tablespoon salt
- 2 cups ketchup
- 1/4 cup tomato paste
- 1/3 cup cider vinegar
- 1/4 cup Worcestershire sauce
- 1/2 cup packed brown sugar
- 1 T sirachi sauce, or to taste
Directions
- In a large skillet over medium heat, combine the onion, garlic, and whiskey. Simmer for 10 minutes, or until onion is translucent. Mix in the ground black pepper, salt, ketchup, tomato paste, vinegar, liquid smoke, Worcestershire sauce, brown sugar, and hot pepper sauce.
- Bring to a boil. Reduce heat to medium-low, and simmer for 20 minutes. Run sauce through a strainer if you prefer a smooth sauce.

“Delaware Sweet” – great for pork
Simmer:
1/2 C onion
2 T garlic
1 t salt
1 t red pepper flakes
1 6oz can of tomato paste
1 T molasses
1 T honey
2 T brown sugar
1/4 C Bourbon
Blend ingredients smooth then add:
1/4 t cloves
1/4 t cinnamon
3//4 t vanilla
2 t dijion mustard
2 t cayenne pepper
4 t white vinegar
4 t brown sugar
2 t honey
1 t salt
~1/2 C water – until you reach your desired thickness
“Mr. Cumin” – spicy and smokey
Simmer:
1/2 C onion
2 T garlic
1 t salt
1 t red pepper flakes
1 6oz can of tomato paste
1 T molasses
1 T honey
2 T brown sugar
1/4 C Bourbon
Blend ingredients smooth then add:
2 t cayenne pepper
3/4 t liquid smoke
4 t molasses
1 t worchestershire sauce
1 t salt
3/4 t cumin
2 t vanilla
3 T brown sugar
2 T red wine vinegar
~1/2 C water – until you reach your desired thickness
